Eight top toques from around B.C. each held court in a kitchen of their own at the Pacific Institute of Culinary Arts in Vancouver on June 27, 2010. Dishing out peerless plates paired with B.C. wines and winning banter, the fundraiser marked the first of three to be held for the upcoming Canadian Chefs’ Congress (www.ccc2010) on September 11-12, 2010 at Providence Farm.

The congress is only the second of its kind, the first hosted at Eigensinn Farm in 2008. The tasteful gathering will bring together over 500 chefs and cooks from across Canada for a weekend of workshops and conversations committed to sourcing solutions for sustainable ocean futures.

For now, a handful of them are raising funds on the home front resulting in some unsurpassed culinary moments for fans of local, seasonal savvy.

On this night at PICA, the mystery aspect of the fundraiser was the identity of the chefs in the various kitchens. With thanks to host chef/instructor Julian Bond (PICA), chefs Angus An (Maenam), Robert Belcham (refuel/Campagnolo), Robert Clark (C/Nu/Raincity), Scott Jaeger (The Pear Tree), Neil Taylor (Cibo Trattoria), James Walt (Araxi) Neil Wyles (Hamilton Street Grill) and their culinary crews all found ample room to entertain and amaze.

Top kudos to the bounty of local fishers, producers and suppliers who showed up both in person and on the plate in support of the night and the purpose of the upcoming congress.
